Method

  1. I find that the best way to colour buttercream is to use paste (sometimes called gel) food colourings. This is what the professionals use and it’s really concentrated so you can achieve an intense deep colour as well as beautifully subtle pastel shades without having to add lots of liquid to your buttercream. They cost a bit more than liquid colours but last for a long time. Avoid the temptation of buying lots of different colours and start with a few basics, which you can mix to get the colour you want.
  2. Keep in mind that butter actually has a yellow tint to it so adding a tiny bit of blue will actually make your buttercream a nice minty green. Cocktail sticks are handy for adding colourings to your buttercream as you can throw them away as soon as you have dipped them into the pot once. A little goes a long way, so start off with a small amount and build up the shade that you want gradually.
  3. Paste colours aren’t just for buttercream. For a colourful surprise, make a cake with plain white buttercream on the outside and colour the cake layers on the inside. The White Rose Cake can easily be adapted into a rainbow cake. Swap the rose extract for vanilla and, once you have made your cake batter, weigh it into 6 separate bowls and use a generous amount of paste to colour each batch red, orange, yellow, green, red and violet. Working in batches, bake each colour batter in a separate tin and reduce the baking time to 15-20 minutes.
