These cheese straws are like savoury fingers of shortbread and make a flavoursome pairing with cold beer. Bundle them in greaseproof paper to present them as a gift.

Ingredients

Quantity Ingredient
300g mature cheddar, grated
100g butter, cubed and chilled
200g plain flour, plus extra for dusting
good pinch salt
1 large egg yolk
1 tablespoon caraway seeds

Method

  1. Preheat the oven to 180°C, and line 2 baking trays with baking paper.
  2. Place the cheese, butter, flour, salt and egg yolk into the bowl of a food processor, and process briefly with the beater attachment to form a dough. Turn the dough out onto a floured surface and scatter the caraway seeds over it. Knead the dough briefly until it is smooth, then roll out the dough and cut long, 2 cm-wide strips with a pizza wheel or sharp knife.
  3. Transfer the dough strips to the prepared trays and chill them in the freezer for 10 minutes (this helps the straws to keep their shape). Bake in the oven for 8 minutes, or until golden brown.
  4. Allow to fully cool on a wire rack, then store in a tin or an airtight container for up to a week.
