This platter is all about celebrating the approaching weekend in the company of co-workers. These ingredients are just suggestions – use whatever you like!

Ingredients

120g olives
150g sun-dried tomatoes in oil, drained
200g roasted red peppers in oil, drained
150g feta
2 avocados, peeled, stoned and sliced
150g Speedy ricotta & rocket gnocchi with herb pesto, pesto
200g chopped vegetables
400g mixed nuts
150g radishes
100g cured meat
1 small loaf, good-quality bread
balsamic vinegar, to drizzle

Method

  1. Arrange all the ingredients on a large platter or in small bowls and dig in.
