Smoked salmon is so widely available at supermarkets, it’s no wonder it snuck its way into the book. Feel free to go all out with the herbs and add any sort of nut for extra crunch.

Ingredients

Quantity Ingredient
150g watercress, spinach and rocket mix
150g smoked salmon
2 avocados, peeled, stoned and diced
150g cucumber, halved and finely sliced
55g radishes, finely sliced
2 tablespoons chopped dill
2 tablespoons chopped mint leaves
2 teaspoons sesame seeds

For the dressing

Quantity Ingredient
2 limes, juiced
4 tablespoons olive oi
salt
freshly ground black pepper

Method

  1. Make the dressing by whisking together all the ingredients.
  2. Arrange the salad by laying out the leafy greens and salmon, top with the avocado, cucumber, radishes and sprinkle over the dill and mint. Spoon the dressing on top and scatter over the sesame seeds.
