No need to worry about salad falling out the sides of your sandwich any more. the pita pocket contains everything in one tidy handful!

Ingredients

Quantity Ingredient
handful finely sliced red cabbage
handful finely chopped kale
2.5cm piece of cucumber, sliced
1 tablespoon chopped dill
3 mint leaves, chopped
2 radishes, finely sliced
small handful feta, crumbled
1 lemon wedge
2 tablespoon greek yoghurt
1 pita bread, cut in half
salt
freshly ground black pepper

Method

  1. Toss together the cabbage, kale, cucumber, dill, mint, radishes and feta, then place the lemon wedge on top and seal in a lunch box. Spoon the yoghurt into a small container, wrap the pita in cling film and store in the fridge until needed.
  2. To serve, fill the pita with the salad mix and squeeze the lemon on top. Spoon over the Greek yogurt and season.
