Crispy bacon can be added for extra flavour. Additional green vegetables can also be tossed through to make your meal even more nourishing.

Ingredients

Quantity Ingredient
200g spelt penne
11/2 tablespoon ricotta
11/2 tablespoon greek yoghurt
1 avocado, peeled, stoned and diced
100g fresh shelled peas
2 tablespoons roughly chopped mint
50g pistachios, roughly chopped
50g rocket
salt
freshly ground black pepper

Method

  1. In a medium saucepan of salted water, bring the penne to the boil, then reduce to a simmer and cook according to the packet instructions until al dente. Drain, rinse in cold water and return to the saucepan.
  2. Stir through the ricotta and yoghurt. Then toss in the avocado, peas, mint, pistachio, rocket and season.
  3. Portion into lunch boxes and store in the fridge. Best enjoyed cold as a ‘salad’.
