I serve this Aussie breakfast at the South Bank Surf Club in Brisbane – I think it represents the true multicultural nature of Australian food.

It’s a great one to cook outside on the barbecue, especially if you are making up a batch of Corn and Coriander Hotcakes as well. You will need a side burner on your barbecue, or alternatively you can fry the eggs on the barbecue plate. Note that you can use the deep-frying oil more than once by allowing it to cool after cooking, then straining.

Ingredients

Quantity Ingredient
1 litre sunflower oil, for deep-frying
8 rashers smoked bacon, rind removed
8 raw king prawn tails, peeled and deveined
8 eggs
1 red chilli, chopped, to garnish
2 spring onions, finely sliced, to garnish
oyster sauce, to serve

Method

  1. Pour the oil into a wok and heat to 160°C.
  2. While the oil is heating, grill the bacon for about 5 minutes, or until crispy. Add the prawns and cook for around 3 minutes. Once the bacon and prawns are cooked, keep them warm on the edge of the barbecue.
  3. When the oil is ready, crack the eggs into a cup, then add them to the hot oil, one at a time. Be careful, as the oil will splatter. Cook no more than 2 eggs at a time and push the oil around so they cook evenly. After about 1 minute remove the eggs from the oil and quickly drain them.
  4. To serve, arrange the prawns and bacon on a plate. Top with the deep-fried eggs, garnish with chopped chilli and spring onions and drizzle with oyster sauce.
