Muffins are pretty commonplace these days – you can’t pass a café or high street coffee joint without seeing them. They are the perfect breakfast on the go! These ones are dead easy to make, so keep a little extra money in your pocket and make your own.

If you want to add fruit or chocolate to this basic muffin recipe, go right ahead. For banana muffins, just add a couple of mashed ripe bananas to the egg, milk and oil mixture. If you want to add fruit like diced apple or pear, combine it with the dry ingredients. Half a cup of chopped chocolate is great with the banana!

When I’m cooking muffins, I find non-stick muffin moulds are best – you can line them with baking paper for presentation if you like.

Ingredients

Quantity Ingredient
225g plain flour
100g caster sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
120ml sunflower oil

Method

  1. Preheat the oven to 200°C.
  2. Combine the flour, caster sugar and baking powder in a large bowl and make a well in the centre. Place the remaining ingredients in a jug and combine, then pour into the centre of the well. Mix until just combined (don’t overmix).
  3. Spoon the mixture into standard size muffin moulds. Place in the oven to bake for about 20 minutes, or until the muffins are well risen and springy to the touch.
