An omelette is a classic breakfast or brunch egg dish, and the perfect test of a cook’s skill. It’s something you might want to make for that special someone – the occasion is up to you!

This recipe is for a single serve, as perfect omelettes need to be cooked one at a time. You’ll need a non-stick 24-centimetre omelette pan. If you want to add a filling – for example, mushrooms – it’s best to prepare it separately beforehand and keep it warm until you’re ready to serve.

I love the traditional addition of fine herbs, added to the egg mix prior to cooking. Try a teaspoon each of chopped chives, chervil and tarragon. To garnish, slices of smoked salmon and some sour cream and chives would be perfect.

50g butter, plus extra to serve

Method

  1. Break the eggs into a bowl and whisk them together with a fork. Season with salt and pepper.
  2. Heat the omelette pan over medium heat. When hot, add the butter and heat until it melts and gently foams. Add the beaten eggs. Gently move the egg mixture around the pan occasionally – the idea is not to scramble the eggs, but to move them around in the first few moments before allowing them to set. You don’t want to allow the eggs to cook for too long or at too high a temperature.
  3. The omelette is ready to serve when the bottom is set and lightly golden, and the top is just runny, or what chefs call baveuse.
  4. Shaking the pan to loosen it a little, slide the omelette towards the edge of the pan. Use a palette knife to flip the omelette over by a third.
  5. Bring your serving plate up to the side of the pan and slide the folded edge of the omelette onto the plate. Fold the remaining edge over to create a cigar or torpedo shape.
  6. To serve, brush a little extra butter over the omelette. If you’re adding a filling, make an incision down the middle of the omelette and spoon it in.
