Spinach and avocado salad with sesame dressing

This simple, Japanese-inspired salad goes really well with Caramelised miso beef.

Ingredients

Quantity Ingredient
200g baby spinach
1 ripe avocado, sliced
2 french shallots, finely sliced
1 teaspoon sesame seeds, toasted

Dressing

Quantity Ingredient
1/3 cup rice wine vinegar
1/3 cup mirin
2 tablespoons lime juice
1 teaspoon wasabi paste
1 tablespoon sesame seeds, toasted and ground
1 tablespoon tamari
1/2 teaspoon sesame oil
2/3 cup sunflower oil

Method

  1. To make the dressing, place all the ingredients in a blender and mix until combined.
  2. Wash and drain the baby spinach well. Toss the spinach with half of the dressing and arrange on a platter. Scatter the slices of avocado and French shallots over the top.
  3. Pour over the remaining dressing and garnish with the sesame seeds.
