I love this dish! The sweet saltiness of the marinade combines perfectly with the buttery texture of the Wagyu beef, which just melts in the mouth.

I have served this dish on its own as a canapé, and as a starter, accompanied by Spinach and Avocado Salad with Sesame Dressing. The inclusion of Wagyu beef makes this recipe a little out of reach for everyday occasions, but sometimes you can find it at a good price. If not, just look for some good grain-fed fillet. Note that if you’re using the Wagyu, go for the middle cut so it has an even thickness. You’ll find crispy shallots at Asian food stores and shizu cress at good greengrocers.

You probably won’t use all of the marinade, but it will keep for up to 1 month in the refrigerator if stored in an airtight container, and it also freezes really well.

Ingredients

1 x 1.5kg fillet wagyu beef
2 tablespoons crispy fried shallots, to garnish
shizu cress, (optional), to garnish

Marinade

250g red miso paste
175ml mirin
75g caster sugar

Method

  1. To make the marinade, combine the ingredients and place them in a glass bowl suspended over a simmering saucepan of water. Leave to simmer for 1 hour, or until the caster sugar has completely dissolved.
  2. To cure the beef, firstly trim the fillet of all silver skin and external fat. Smear the meat well with the marinade. Cover and refrigerate for at least 2 hours, and up to 4 hours.
  3. Line the grill tray with foil and preheat the grill to high. Spoon on any marinade that’s drizzled from the beef, returning as much as possible onto the meat. Grill the beef for 2–3 minutes on each side until the marinade starts to caramelise.
  4. Remove the beef from the grill and leave to cool to room temperature. Keep covered with foil until required.
  5. To serve, thinly slice the beef and arrange on a platter. Garnish with crispy shallots and shizu cress (if using).
