I experienced this dish while feasting in a hawker centre in Singapore. I was so taken by the flavours that I recreated it as best I could! In Singapore, they make it with long, light purple eggplants, which are so creamy, but these can be hard to find in Australia, so just use the best quality eggplant you can get your hands on.
