Ingredients

Quantity Ingredient
1 tablespoon sunflower oil
1 teaspoon yellow mustard seeds
12 fresh curry leaves
1 onion, sliced
1 garlic clove, chopped
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon black peppercorns
1/2 teaspoon ground cumin
2 whole cloves
1/2 cinnamon stick
1 fresh or dried bay leaf
1 cup brown sugar
1 cup cider vinegar
2 x 400g cans whole tomatoes, drained
salt

Method

  1. Heat the oil in a saucepan over medium heat. Add the mustard seeds and curry leaves, and heat until the mustard seeds pop. Add the onion and garlic and quickly fry. Toss through the remaining spices and bay leaf, and cook for 2 minutes. Stir in the brown sugar, cider vinegar and tomatoes and reduce. Cook out until thick, jammy and sweet and sour. Season to taste.
