This recipe is an Aussie take on roast chicken, using one of the most iconic Aussie foods there is – Vegemite! I use Vegemite as a stock base for a lot of things. When I first started making pies in the UK, I used it as a flavour base and colouring agent. However, when you end up needing 20 kilos of the stuff a week, it can get a little tedious opening jar after jar! Thankfully, you don’t need that much for this recipe. The chicken juices make awesome gravy – just mash in the onions from the bottom of the roasting tin. Serve this with potato salad and some green beans.

Ingredients

1 x 1.6kg chicken
freshly ground black pepper
1/2 bunch thyme
3 garlic cloves, peeled
1/4 lemon
2 tablespoons vegemite
2 onions, halved

Method

  1. Preheat the oven to 180°C.
  2. Trim the excess skin and fat from the cavity and neck of the chicken. Season the inside of the chicken with pepper, then stuff the thyme, garlic and lemon into the cavity. Smear the Vegemite evenly all over the chicken.
  3. Place the onion cut-side down in a roasting tin. Pour in 1 cup of water and place the chicken over the onions, with the breast facing up.
  4. Place the tin in the oven and roast for 30 minutes. Turn the chicken, add a little more water and roast for a further 20 minutes.
  5. To check if the chicken is cooked, insert a long knife into the thigh of the chicken: if the juice runs clear, the chicken is ready. Allow to rest for 15 minutes before carving.
