This is a dish from my childhood. It’s one of those recipes that’s really about making the most of what you have on hand.

You could use raw lamb or beef mince, rather than leftover roast meat, but it would be more fatty. If you use beef you wouldn’t be able to call it shepherd’s pie – it would be cottage pie!

If you don’t have a mincer at home, just chop the cooked meat by hand. You could also add frozen peas to the mince prior to placing it in the baking dish.

Ingredients

2 tablespoons sunflower oil
1 large carrot, diced
1 large onion, diced
1 large stick celery, diced
2 garlic cloves, chopped
500g Classic roast leg of lamb, minced
2 tablespoons vegemite
1/4 cup tomato sauce
2 tablespoons worcestershire sauce
salt
freshly ground black pepper
6 potatoes, peeled and chopped
100g butter
1/4 cup milk

Method

  1. Heat the sunflower oil in a large saucepan over medium heat. Sauté the carrot, onion, celery and garlic for about 15 minutes, or until soft and translucent. Stir in the minced lamb and cook for about 5 minutes. Add the Vegemite, tomato and Worcestershire sauces and enough water to just cover the mixture. Simmer for about 2 hours. When cooked, season with salt and pepper, cover and leave to stand.
  2. Preheat the oven to 180°C.
  3. Boil the potatoes in salted water until tender. When cooked, drain and allow to steam dry. Return the potatoes to the saucepan and mash with the butter and enough milk to moisten.
  4. Transfer the mince to a baking dish or shallow casserole dish, and cover with the mashed potatoes. Using a fork, make a hatched pattern across the top of the potatoes.
  5. Place the dish in the oven and bake for 30 minutes, until the mashed potato is golden and the mince is hot and bubbling.
