The recipe for this great sauce was given to me by a Mexican waiter at Monte’s in London when I was head chef there. I use it to accompany Mexican barbecue dishes, such as Mexican suckling pig tortillas. It also works well when strained and served with raw fish as a dipping sauce.

Ingredients

Quantity Ingredient
4 shallots
4 green chillies, seeded
100ml lime juice
100ml white wine vinegar or rice vinegar
2 tablespoons chopped coriander leaves
1 garlic clove, peeled

Method

  1. Combine all the ingredients in a food processor and purée into a medium-textured sauce.
  2. Use straight away. This sauce can’t be stored for too long as the colour starts to fade after a few hours.
