One of my sous chefs came up with this great variation on that old favourite tomato ketchup. It’s great with barbecued duck, in particular, and also with scallops or prawns. Historically, tomato ketchup is a Chinese sauce that was popularised by the Americans, so this combo makes a lot of sense.

Ingredients

Quantity Ingredient
250ml tomato ketchup
1 orange, zested and strained
1 teaspoon finely chopped fresh ginger
1/2 teaspoon dark sesame oil

Method

  1. Combine the ketchup with the orange zest and juice. Add the ginger and sesame oil, and mix thoroughly.
  2. Allow the sauce to stand for 30 minutes before using.
  3. Use this sauce on the same day.
