Ginger beer is such a refreshing drink. It’s also an essential ingredient in my favourite cocktail, the Dark and stormy.

Ingredients

Quantity Ingredient
3 litres boiled water, cooled to lukewarm
300g coconut sugar or golden caster sugar
100ml lime juice
3 tablespoons ginger paste
2 tablespoons brewer’s yeast
ice cubes
lime slices
mint leaves

Method

  1. Combine the lukewarm boiled water, sugar, lime juice, ginger paste and yeast in a stainless steel pot. Stir well. Cover with a lid and leave to brew overnight.
  2. The next day, skim off any impurities that have risen to the surface.
  3. Transfer to two clean 1.5 litre soft drink bottles, using a funnel and a sieve. Don’t ll the bottles to the top!
  4. Secure the lids and place in the fridge. Keep as cold as possible, to inhibit the action of the yeast.
  5. To serve, fill a jug with ice cubes and lime slices. Slap some mint leaves in your hands to bruise them and release their fragrance, then add to the jug. Top with the ginger beer and serve.
