Artichokes with lemon, honey, thyme and almond dressing

We used to cook this recipe at the River Café in London, and it’s a great combination. Make sure you use a good-quality honey.

Ingredients

Quantity Ingredient
1 quantity Coal-baked artichokes
1 garlic clove, peeled
1 tablespoon thyme
salt
1 tablespoon honey
1 lemon, zested and juiced
100ml olive oil
freshly cracked black pepper
1/2 cup toasted flaked almonds

Method

  1. While you are waiting for the artichokes to cool, pound the garlic, thyme and a little salt in a mortar to a paste.
  2. Add the honey and lemon juice and zest, and combine well. Mix in the olive oil.
  3. Peel and cut the artichokes into quarters. While they are still warm, toss with the dressing and season with salt and pepper to taste.
  4. Serve sprinkled with the almonds.
