Ingredients

Quantity Ingredient
1 litre water
450g dark brown sugar
250ml maple syrup
100g sea salt flakes
6 garlic cloves, peeled
4 bay leaves
3 large thyme sprigs
2 teaspoons whole black peppercorns
2 cloves

Method

  1. Place all of the ingredients in a stockpot and bring to the boil over medium heat. Stir to dissolve the sugar and maple syrup. Remove from the heat and allow the brine to cool completely before using.
