Ingredients

Quantity Ingredient
375ml bourbon
1 vanilla bean, split
1/2 cup caster sugar
good splash maple syrup

Method

  1. In a small saucepan, combine the ingredients and set over medium heat, gently stirring until the sugar has completely dissolved.
  2. Bring the mixture to the boil, then lower the heat and allow to simmer until reduced by a third, roughly 5 minutes. Transfer to a sterilised jar and store in the refrigerator for up to 2 weeks.
