Ingredients

Quantity Ingredient
8 pickled herring fillets, rinsed and drained
2 large polish dill cucumber pickles, cut into quarters lengthwise to form little batons
1/4 small white onion, peeled and cut lengthwise into little batons

Method

  1. Lay the herring fillets, skin side down, on a clean work surface. Place 1 pickle baton and a couple of onion batons at the tail end. Tightly roll up each herring to enclose the filling, then secure each with a small toothpick.
  2. Rollmops can be stored, covered in the refrigerator, for up to 5 days.
