This warm soup of sliced or grated cucumber pickles and cream may seem rich when you read the list of ingredients, but it is in fact a lovely, light, summer soup. It is important to use good sour pickles for this recipe, please don’t attempt it with sweet pickles. Although only the pickles are used in this dish, don’t throw away the juice! Poles use pickle juice (and sauerkraut juice) as a cure for many things, such as heartburn, and especially for hangovers. There is some validity in the latter, as the pickle juice contains sodium, which helps the body to absorb moisture more rapidly, assisting with rehydration.

To make a vegetarian version, simply use a vegetarian soup stock. If you can find fresh sorrel, a version of this soup is made where sorrel is substituted for the pickles.

Ingredients

20g butter
300g good-quality polish dill cucumber pickles, thinly sliced or grated, (reserve some of the pickle juice for flavouring)
2 potatoes, peeled and cut into 6 mm dice
1 carrot, peeled and cut into 6 mm dice
1 litre Polish soup stock
60ml pouring cream
1 tablespoon finely chopped fresh dill

Method

  1. Melt the butter in a saucepan over medium heat until the foam separates from the oil. Add the pickles, reduce the heat to medium–low and stir gently until they soften, about 10–15 minutes. Remove from the pan and set aside.
  2. Meanwhile, place the potato, carrot and stock in a large saucepan or stockpot and bring gently to a simmer. Cook the vegetables for about 10 minutes, or until they are just soft. Add the pickles and cook for a further 5 minutes.
  3. To serve, stir in the cream and dill. Season with salt, black pepper and some of the reserved pickle juice. The finished soup should be creamy and salty, balanced with some pickle tang; avoid making the soup really sour.
