Sours are a class of cocktail where a spirit is mixed with sour citrus and some kind of sweetener. Sometimes egg white is added. If you shake it really hard for 30 seconds, the egg white becomes really fluffy. In some drinks, like a Whisky Sour, I find egg white indispensable; in others, like the Ninja Love, it would smooth out the flavour too much. For people who disdain sweet drinks and love sour things, if you pick a sour where sugar is the main sweetener, you can reduce the amount of sugar until it is quite small. Alcohol and sour citrus with no sweetener at all is a bit ungainly and astringent, it feels like there’s a hole in the middle of the flavour. A small amount of something sweet will result in a very sour cocktail, but one with a better flavour profile.
