One of my favourite styles of sour is one in which roughly equal parts of a sweet liqueur, a strong spirit and sour citrus are married. In this combination the oaky Calvados with its apple notes, the sweet cherry vodka and the sour cherry syrup interact beautifully and are toned down a lot by the lemon and egg white, resulting in a very complex, yet very subtle cocktail.

Ingredients

Quantity Ingredient
30ml calvados
30ml see method for ingredients
5ml sour cherry syrup
1/2 lemon, juiced
1 egg white
1 maraschino cherry, to serve

Method

  1. Put all of the ingredients, except the cherry, into a shaker with ice. Shake hard for 30 seconds to really fluff the egg white, then strain into a chilled martini glass. Garnish with the maraschino cherry on the rim.
