Ingredients

Quantity Ingredient
2 teaspoons Sugar syrup
10 mint leaves, (see note)
60ml white rum
20ml fresh lime juice
a spent lime shell, (see note), to garnish
soda water
a sprig mint, to garnish

Method

  1. Put the first two ingredients into a glass. Using the handle end of a wooden spoon, swirl the leaves around the glass (this will bruise them enough to extract the flavour but not so much as to make them taste like lawn clippings). Add the rum and lime juice, and fill the glass with cubed ice, stirring until the glass is frosty. Push the lime shell into the drink, top with soda, stir once and float the mint sprig on top.

Note

  • Tastes strong and a little aromatic.

Note

  • Spearmint is more authentic than peppermint for this drink, but peppermint has a more vibrant flavour.

Note

  • Spent lime shell: half a lime after the juice has been squeezed out.

Note

  • This is best served in a collins glass.
