As far as dips go it’s hard to beat a great guacamole, and it is one of the easiest recipes to whip up for unexpected guests. Everyone has their own secret recipe for a good guacamole, and this is my version, served with pork scratchings. Not for the faint-hearted!

Ingredients

Quantity Ingredient
3 ripe avocados, halved, stones removed
dash tabasco sauce
1 lime, juiced
1/2 red onion, diced
2 roma tomatoes, seeded and diced
handful coriander leaves, roughly chopped
1 garlic clove, minced
1/2 teaspoon sea salt
cayenne pepper, to taste
1 packet pork scratchings, (see note)

Method

  1. Use a spoon to scoop the avocado flesh into a mixing bowl. Add the Tabasco sauce and lime juice, then use a fork to mash it well. Fold in the onion, tomato, coriander and garlic. Season with the salt and give it a quick mix.
  2. Transfer the guacamole into a serving bowl and sprinkle a pinch of cayenne pepper over the top. Serve with a bowl of pork scratchings sprinkled with a little extra cayenne pepper

Tip

  • To avoid the guacamole turning brown from oxidation, it is best to make it just before guests arrive. If you do prefer to make it ahead of time, cover with plastic wrap and leave in the refrigerator for no longer than 2 hours.

Note

  • Pork scratchings, or pork crackles, are available at Asian or European grocers. A 300 g packet is ‚sufficient for this recipe.
