No-bake key lime tarts

This has to be one of my favourite southern American desserts. Technically, I can’t really call this a key lime tart since we can’t get key limes in Australia. But nothing is going to stop me taking a big bite into this limey tart and picturing myself relaxing in the sunshine in the Florida Keys.

Ingredients

Quantity Ingredient
4 Sweet pastry tart cases
125ml lime juice
1 lime, finely zested
395g tinned sweetened condensed milk

Method

  1. Put 4 tart cases on a tray. Combine the lime juice, lime zest and condensed milk in a bowl. Pour the mixture into a jug and then pour into the tart cases, filling them to the brim. Place in the refrigerator to set for 2–3 hours.
