Of all the recipes that might hope to benefit from a new generation of Southern chefs putting its own take on the classics, pimento cheese sits at the front of the class. Although there are endless debates about the perfect version, there is one constant: you need to start with the very best sharp Cheddar you can find. From there, I’ve only tried my best not to insult your grandmother’s version. Best served with Ritz cheese crackers and a drink.

Ingredients

Quantity Ingredient
100g see method for ingredients
1 large egg yolk
A pinch sea salt
2 dashes worcestershire sauce
1/4 teaspoon cayenne pepper
3 drops tabasco sauce
75g red pepper, finely diced
1 small jalapeno chilli pepper, roasted, peeled and diced
250g mature cheddar, grated

Method

  1. Mix everything together except the cheese. Fold through the cheese and check the seasoning. Serve chilled.
