The smell of a barbecue brings back memories. It reminds me of great experiences, of holidays, summer, family and friends. I love barbecuing so much that I’ve probably tried to cook just about everything on the barbecue at one time or another! When the weather is good, I'll build a fire at home and cook on the barbecue every couple of nights. It's definitely my favourite cooking technique as it adds depth of flavour with the smokiness and caramelisation. One of my favourite things to do is push the barbecue to the side and just build a fire in an old drum, put a rack on top and cook on that. Every year when I go on holidays to the river at Eehuca with my mates, I build a barbecue in a fire pit. It’s all about building happy memories and food is an important part of that.

If you’re entertaining around the barbecue and you give someone a barbecued sausage in bread they’ll probably wander off and eat it. However, if you put a whole butterflied chicken in the middle of the table with a few exciting sides and salads around it, people will want to stay at the table and enjoy time together.
