Butterflying a chicken means you get a lot more charring and caramelisation all over. The jerk marinade is hot, so serve this with a refreshing salad like a celeriac and apple slaw.

Ingredients

1.8kg free-range chicken
270g Jerk spice rub
olive oil, for cooking
1/2 fresh pineapple, peeled and cut into 1.5 cm slices
1 lemon, halved

Method

  1. Place the chicken, breast side down, on a chopping board. Using chicken scissors, cut the chicken along either side of the backbone and then remove it. Spread the chicken flat, flip it over and press your palm onto the breastbone to flatten or butterfly the chook. Put the chicken into a large container, spoon over 200 g of the jerk spice rub. Rub it into the chicken, cover and place in the refrigerator to marinate for a few hours or preferably overnight. When ready to cook, remove the chicken from the container and rub off any excess marinade and discard it.
  2. Preheat the barbecue to medium.
  3. Season the chicken with salt and a dash of olive oil, then place it on the grill plate, breast side down. Cook for 15 minutes and then flip it over. Brush over a little of the reserved marinade and cook, covered, for a further 15 minutes. Brush another layer of marinade on the chicken, turn the heat up to medium-high and cook for 2-3 minutes to caramelise the chicken. Check for doneness by inserting a skewer into the thickest part of the thigh –the juices should run clear. Remove the chicken from the barbecue and let it rest, covered loosely with foil, for at least 20 minutes.
  4. Brush the pineapple lightly with olive oil and grill it on the barbecue for 3-4 minutes each side, until caramelised and just cooked through. Squeeze the lemon over the top of the chicken and serve with the grilled pineapple.

Brent’s tip:

  • Be careful not to have your barbecue on too high a heat as the marinade will burn easily.
