Steak burger with pancetta, smoked cheddar and smoked tomato relish

This is very rich dude food, especially when served with the eggplant chips with spicy kewpie mayo. To lighten it up a little, remove the onion and add some pickles instead.

Ingredients

4 thin slices pancetta
2 tablespoons olive oil, plus extra for cooking
2 large onions, thinly sliced
1 tablespoon sugar
2 garlic cloves, crushed
4 x 150g scotch fillet steaks
4 slices smoked cheddar cheese
4 burger buns
95g Smoked tomato relish
handful rocket or baby english spinach leaves

Method

  1. Preheat the barbecue to high.
  2. Cook the pancetta on the barbecue grill plate until caramelised, about 30-60 seconds each side. Or, alternatively, cook it in a small frying pan over medium-high heat. Set aside. Reduce the heat on the barbecue to low and add the 2 tablespoons of oil and onions. Sprinkle with the sugar and cook for 15 minutes, without colouring. Add the garlic and cook for a further 10 minutes. Alternatively, cook in a small frying pan over medium heat. Remove the onion mixture and transfer to paper towel to drain.
  3. Season the steaks with salt and pepper and a dash of olive oil.
  4. Turn the barbecue to high again. Once the barbecue is smoking, add the steaks. Cook for 2-3 minutes then flip over, cover with the cheese and cook for a further 2 minutes. Remove and rest, covered, in a warm place.
  5. While the steak is resting, slice the burger buns in half and place them on the grill, cut side down, to toast for about 30-60 seconds. (Only toast the cut side.)
  6. Remove the toasted buns from the barbecue and assemble your burger. Spread the tomato relish on the bottom bun, then top with the caramelised onion, steak, pancetta and rocket. Finish with the chipotle mayo then top with the other half of the bun.
