Thai cabbage and snow pea salad with honey peanuts

This dish represents a vegetarian me on a plate (well, apart from the fish sauce)! This is one of my favourites that I eat at least once a week. It’s so fresh and includes my beloved Southeast Asian flavours. Peanuts are crunchy but turn creamy as you chew them. This salad goes really well with barbecued meats or even in lettuce cups. It’s full of flavours and textures to stimulate the senses.

Ingredients

Quantity Ingredient
350g cabbage, finely shredded
5 spring onions, cut into 5 cm lengths
1 carrot, cut into finger-sized batons
100g snow peas, finely shredded
90g bean sprouts
1 bunch coriander leaves

Honey peanuts

Quantity Ingredient
80g roasted peanuts
1 teaspoon honey

Dressing

Quantity Ingredient
1 tablespoon fish sauce
1 tablespoon shaved palm sugar
1 bird's eye chilli, thinly sliced
1 lime, juiced

Method

  1. For the honey peanuts, put the peanuts in a large dry frying pan over medium heat and cook until golden, about 5 minutes – be careful not to burn them. Once golden, add the honey and toss to careful not to burn them. Once golden, add the honey and toss to coat. Remove from the pan and set aside.
  2. For the dressing, combine the fish sauce and palm sugar in a small bowl and stir until the sugar dissolves. Add the chilli and lime juice and combine. Check for a good balance of flavours and adjust as necessary.
  3. Combine all the salad ingredients, except the honey peanuts and coriander. Drizzle over the dressing and top with the honey peanuts and fresh coriander leaves.
