I worked driving a Bobcat for seven years. Every day I would get up at 4 am. If I didn’t have breakfast I wouldn't get a chance to eat for another five hours, so every morning I got up ten minutes early and had a bowl of porridge. But that soon got boring, so I started having muesli – roasting or stewing fruit the day before and incorporating that.

However, weekends have always been special. Breakfast is a leisurely, enjoyable ritual. Every Saturday I get up and make a huge spread. Then my partner, Madison, and I sit at the table reading the paper, dipping crusty bread into our favourite Spanish baked eggs, enjoying the time together. If I don’t start the weekend this way, I miss it. A weekend breakfast or brunch is often one of the best opportunities to spend time around the table with loved ones.

I’ve never been a huge bacon and egg fan – except for after a few beers on a Saturday night! I generally like to take a slrnple Ingredient, like eggs, and add flavours that make it come alive. You don’t need to have toast for breakfast. Look at cuisines around the world and see what they have for breakfast – you could even have nasi goreng if you wanted!
