I’ve always loved eating desserts and sweet things but until recently I hardly ever made them and would usually just buy them. However, since going on MasterChef, desserts have become a main focus for me. I get more excited about sweet things now than I do about savoury dishes because, with desserts, you can incorporate unusual textures and ingredients, and that makes things interesting.

You can put a dessert in front of me that’s been created by the greatest chef in the world, but chances are I’ll go back to a chocolate brownie every time. I love all chocolate – I’m obsessed with it. I like it with hazelnut and orange as well as with more other unusual flavours like szechuan pepper, Caramelised white chocolate is a recent discovery of mine and, believe me, once you’ve tried it, you’ll never go back to regular white chocolate again!

This chapter includes all my favourites, including mousses, slices, puddings, ice cream, cakes and crumbles. And, of course, there’s a lot of chocolate…
