Banana bread with cream cheese frosting

Banana bread was one of my mum’s best recipes and she used to make this with very overripe bananas. The luscious cream cheese frosting takes it to another level.

Ingredients

Quantity Ingredient
225g self-raising flour
165g firmly packed brown sugar
190g dark chocolate chips
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon mixed spice
3 very ripe bananas, mashed
250ml milk
100g unsalted butter, melted, plus extra for greasing
2 large eggs
1 teaspoon vanilla bean paste

Cream cheese frosting

Quantity Ingredient
100g cream cheese, softened
50g butter, softened
150g icing sugar, sifted
1 teaspoon vanilla bean paste

Method

  1. Preheat the oven to 200°C (or 180°C for a fan-forced oven). Brush a 7 x 10.5 x 21 cm (1.6 litre capacity) loaf tin with melted butter and set aside. (You can also line it with baking paper if you are worried it might stick.)
  2. Place the flour, brown sugar, chocolate chips, bicarbonate of soda and spices in a bowl and mix well to combine.
  3. In a separate bowl, combine the mashed bananas, milk, butter, eggs and vanilla. Add this mixture to the flour mixture and stir until just combined. Pour into the prepared tin. Bake for 40-50 minutes or until a skewer comes out clean when inserted in the centre. Remove the banana bread from the tin after 5 minutes and set aside to cool on a wire rack.
  4. For the cream cheese frosting, using an electric mixer, cream together all of the ingredients until really light and fluffy. Spread generously over the cooled banana bread or, spread on individual slices at serving time.

Brent’s tips:

  • For a less decadent loaf, leave out the chocolate chips and simply dust the loaf with icing sugar instead of the cream cheese frosting.

    For a more nutritious loaf, add 50 g rolled oats or coconut flakes to the bread before baking.

    For an extra spicy kick, add 1/2 teaspoon ground cinnamon and 1/2 teaspoon mixed spice to your cream cheese frosting.
