You can buy tortillas ready made, but they taste so much better if you make your own. It’s not that difficult and with a little practice you’ll be whipping up fresh tortillas in no time.

Ingredients

Quantity Ingredient
2 cups plain flour, plus extra for kneading
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sunflower oil
150ml warm water

Method

  1. Sift the flour, baking powder and salt into a bowl. Make a well in the centre and add the oil and water. Mix until combined. You should have a very soft dough. Cover and set aside to rest for 10 minutes.
  2. Turn the dough out onto a lightly floured surface and knead for 1-2 minutes or until quite smooth. (Do not worry if it is not elastic yet.) Divide the dough into 8 equal-sized balls. Place them in a single layer on a tray lined with baking paper. Cover with plastic wrap and set aside to rest for a further 15 minutes.
  3. Roll out one piece of dough on a lightly floured surface, with a lightly floured rolling pin, very thinly into a circle about 22 cm in diameter. Repeat with the remaining dough balls. (Do not stack the uncooked dough circles on each other or they will stick together.)
  4. Heat a large non-stick frying pan over medium-high heat. When the frying pan is very hot, place a tortilla in the pan and cook for about 1 minute or until lightly browned in places and starting to bubble. Flip and cook the other side for about 30 seconds until slightly puffy, with small golden brown spots on the surface. Do not overcook. Remove the tortillas from the pan and stack them on a plate, covered with a clean tea towel to stop them from drying out and to keep them warm. Repeat the process until they are all done. Serve immediately, or reheat the tortillas briefly in a warm frying pan just before serving.
