I love reinventing dishes and this chapter is full of classics and old-fashioned favourites to which I’ve added my own personal twists.

Of course, the term 'classic' naans something different ta everyone. Someone like me, who grew up in Australia, will have a very different Idea of 'classic' from someone who grew up In Morocco or China. But in this chapter I've included the recipes that I remember from my childhood – the dishes that my mum and dad would cook for me and my sisters. I've just updated them end added a few different flavours and cooking techniques here and there to make them a bit more interesting – although Mum and Dad might still claim that their versions are better!

I love hearty home-cooked food and this chapter contains many recipes that might take you back to your own childhood, from warming soups and slow-cooked stews to curried sausages and chicken parmigiana.
