Spicy beef and pork meatloaf

This updated spicy meatloaf is delicious served with mashed potatoes and greens or roast vegetables. The leftovers are also great in sandwiches the next day.

Ingredients

Quantity Ingredient
2 tablespoons worcestershire sauce
1 tablespoon wholegrain mustard
1 teaspoon hot english mustard
125ml tomato sauce
1 tablespoon brown sugar
500g beef mince
250g pork mince
1 egg, lightly beaten
1/2 brown onion, grated
1 small zucchini, grated
1 small carrot, grated
100g dry breadcrumbs
Creamy mash, to serve

Method

  1. Preheat the oven to 200°C (or 180°C for a fan-forced oven).
  2. Line 4 individual 300 ml loaf tins or a 1.2 litre loaf tin with baking paper, extending the paper up over the long sides.
  3. Combine the worcestershire sauce, mustards, tomato sauce and sugar in a bowl and mix together with a whisk. Set aside.
  4. In a large bowl combine the beef, pork, egg, onion, zucchini, carrot and breadcrumbs. Season with salt and pepper, then divide the mixture into 4 or form the mixture into a large log shape.
  5. Push the meat mixture into the loaf tin/s, pushing down to remove any air bubbles. Pour over the mustard mixture and bake the individual loaves for 30–35 minutes, or the large loaf for 55-60 minutes, or until firm to the touch. Serve with the mash.
