Mandarin and yuzu ice lolly

This is a very refreshing, sharp-tasting ice lolly. If you like, you can add a measure of vodka or sake to the mixture, taking out the same amount of mandarin juice – or dip the lollies in either one as you eat them, as above.

Ingredients

Quantity Ingredient
100g caster sugar
50ml water
2 mandarins, pared zest
500ml mandarin juice, (from around 12 mandarins)
50ml yuzu juice
1 teaspoon powdered yuzu zest, (optional)

Method

  1. Put the sugar in a small pan with the water and mandarin zest. Stir over a low heat until the sugar has dissolved. Remove from the heat and leave to cool to room temperature.
  2. Strain the sugar syrup, then stir in the mandarin and yuzu juices, and the powdered yuzu zest, if using. Pour into your ice lolly moulds and freeze until solid.
