Grapefruit, allspice and chilli cordial

Look at recipes for a whole variety of cordials and you will find few that don’t contain citrus of some sort. As much as I love these (elderflower and lemon, or blackberry and lime in particular are both wonderful), here I have chosen three favourites in which citrus is the dominant flavour. The mandarin cordial works well as a blueprint – exchange the mandarins and limes for blood oranges, for example.

Ingredients

Quantity Ingredient
1 grapefruit, Grated zest and juice, (around 150ml juice)
a few thin slices scotch bonnet chilli, (more if using a milder variety of chilli)
a few allspice berries, lightly crushed
350ml water
150g granulated sugar

Method

  1. Put the zest, juice, chilli and allspice berries in a sterilised heatproof bowl or jug. Put the water and sugar in a saucepan and heat slowly until the sugar has completely dissolved. Bring to the boil then simmer for 5 minutes.
  2. Pour the sugar syrup over the ingredients in the bowl and continue as for Mandarin, Lime and Basil Cordial.

Cocktail suggestion

  • Try adding a couple of tablespoons of this to a measure of gin. Muddle in a couple of mint leaves and a couple of twists of grapefruit, then top with plenty of ice and tonic water.
