There are several dishes in this chapter that I could happily eat on their own, but there is no doubt they are all useful as side dishes. I use them mainly when I want a hint of citrus in a meal but I don’t want it to dominate – so most of these will be served alongside anything simply grilled, traditionally roasted, or even casseroled, as long as the accompanying sauce isn’t overwhelmingly citrus. Of course, sometimes citrus dishes can complement one another – for example,I would be very comfortable serving any lemony, buttery vegetables alongside a lemon- or bergamot-scented roast chicken. Likewise the fragrant Lime and Coconut Rice is the perfect accompaniment to anything with sharp and sour elements.
