Try this yummy salad wrapped in lavosh with sliced cold meat or chicken, or use it to accompany your favourite roast. For a change, try this with roasted pepitas.

Ingredients

Quantity Ingredient
500g carrots, cut into matchsticks and blanched
1/4 cup coriander leaves, chopped
2 tablespoons currants
2 garlic cloves, crushed
1 teaspoon cumin seeds, roasted and crushed
2 tablespoons extra-virgin olive oil
1 tablespoon lemon or orange juice
1 tablespoon pepitas

Method

  1. Combine the carrot, coriander, currants, garlic and cumin in a large mixing bowl.
  2. Pour on the oil and lemon juice and toss together well. Serve topped with pepitas.
