A fabulous accompaniment to any grilled, barbecued or roasted meat, chicken or fish. Or try with our favourite wrap or on our steak sandwich.

Ingredients

Quantity Ingredient
1/2 cup burghul
water, boiling
1 cup parsley, roughly chopped
1 cup mint, roughly chopped
2 roma tomatoes, diced
3 green onions, finely sliced diagonally
1/4 cup lemon juice
2 tablespoons olive oil
1 lemon, finely zested
2 garlic cloves, crushed

Method

  1. Place the burghul in a large bowl and add enough boiling water to cover. Allow to stand for 15 minutes.
  2. Drain the burghul if necessary and return it to the bowl. Stir through the remaining ingredients, tossing well.
  3. Chill, covered, until required.
