This is a fabulous accompaniment to easy biryani.

Ingredients

Quantity Ingredient
1 tablespoon olive oil
400g canned brown lentils, drained
2 medium tomatoes, diced
50g baby spinach leaves, shredded
1 lemon, juiced

Method

  1. Heat oil in a frying pan on medium. Add the lentils and cook, stirring, for 1–2 minutes to warm through.
  2. Stir in the tomatoes, spinach and lemon juice, and cook for 1 minute until the spinach has wilted.
