Sandwiches make a great snack or light meal in minutes. But they do taste better made with fresh bread. Keep a loaf in the freezer and simply defrost as many slices as you need each time. This salad combo is a great favourite with Jennene’s daughter.

Ingredients

Quantity Ingredient
2 slices wholegrain bread
4 slices tomato
4 slices cucumber
2 slices beetroot
1/4 cup alfalfa sprouts
1/4 cup carrot, grated
1 slice reduced-fat fetta cheese
1 tablespoon black olives, chopped

Method

  1. Top one slice of bread with toppings. Finish with second slice of bread. Halve and serve.

Variation

  • These are numerous, of course, but we also particularly like using reduced-fat tasty cheese and lettuce or rocket in place of alfalfa.

Super ingredient: Alfalfa sprouts

  • In food value, sprouts rate midway between a dry seed and a green vegetable. Compared to the dry seed from which they grow, sprouts have 3–5 times more vitamin C. However, because sprouts have 8 times more water than a dry seed, their other nutrients are diluted, making them less concentrated in B vitamins. Crunchy, light and tasty, they are nutritious – but not as impressively as is often claimed.
