This is a punchy little starter with real presence due to the shiso. The shiso leaf has a basil and anise flavour, and we go crazy for it. It tastes and looks beautiful and always gets people talking. To make this into a main dish, simply double the quantities given here and add to our purple rice, which is a combination of white and black rice.

2 spring onions white and green ends, finely sliced
2 tablespoons sesame oil
or 2 tablespoons Shiso Oil
400g fresh yellowfin tuna, cut into 1.5 cm cubes
8 fresh shiso leaves
10g hijiki seaweed, rehydrated
pinch alaea or hawaiian sea salt

Method

  1. Add the spring onion to a mixing bowl, along with the sesame or shiso oil and tuna. Tightly roll up the shiso leaves, two at a time, thinly slice and add to the tuna. Add the hijiki and mix everything together, then season with salt.
