Li Hing mui powder is made from salty dried plums and tastes amazing. Adding this to the rim of the glass instead of salt gives a nice twist to an absolute classic cocktail.

Ingredients

Quantity Ingredient
1 lime wedge
2 tablespoons li hing mui powder
2 tablespoons demerara sugar
handful ice
2 tablespoons freshly squeezed lime juice
2 tablespoons cointreau or triple sec liqueur
60ml good-quality tequila
1 lemon slice

Method

  1. Rub the lime wedge around the rim of a martini glass.
  2. Mix the li hing mui and sugar on a small plate. Dip the rim of the glass into the mixture and twist to coat.
  3. Put the ice, lime juice, Cointreau or triple sec and tequila into a cocktail shaker. Give it a good hula shake. Strain the cocktail into the martini glass. Garnish with a lemon slice and drink up!
