Delicious as a non-alcoholic lemonade, the shiso simple syrup also makes an excellent base for cocktails.

Ingredients

Shiso simple syrup

Quantity Ingredient
250ml water
250g sugar
15 fresh shiso leaves, roughly torn
50g fresh ginger, sliced into rounds

Lemonade

Quantity Ingredient
2-3 tablespoons freshly squeezed lemon juice
ice cubes
soda water, to top up
2-3 fresh shiso leaves, to garnish
2-3 slices fresh ginger, to garnish

Method

  1. Combine the water and sugar in a pan and simmer over a medium heat until the sugar has dissolved. Add the shiso leaves and sliced ginger and allow to infuse over a very low heat for 30 minutes. Strain the syrup, discarding the ginger and shiso, before transferring to a sterilised jar.
  2. When you are ready to make the lemonade, in each glass, combine 1 tablespoon of the shiso syrup with 1 tablespoon of lemon juice and add the ice. Top up with soda water and garnish with a fresh shiso leaf and a slice of fresh ginger. The syrup can be stored in the fridge for up to 3–4 weeks.
