We always keep a jar of this in our pantry, ready to use whenever we need it!

Ingredients

Quantity Ingredient
60g banana shallots, peeled and sliced into super-thin rounds
2 tablespoons plain flour
31/2 tablespoons light flavourless oil
1 tablespoon black sesame seeds
1 tablespoon white sesame seeds
1/2 tablespoon onion seeds
1/2 teaspoon onion seeds
1/2 teaspoon soft brown sugar
1/4 teaspoon sea salt flakes

Method

  1. Toss the shallots in the flour, then shake off the excess. In a heavy-based pan, heat the oil to 160°C. Drop in the shallots and fry for about 4 minutes until golden brown and caramelised.
  2. Remove the shallots from the oil with a slotted spoon and drain on paper towels. Meanwhile, toast the seeds in a pan over a medium heat, before mixing with the sugar and salt in a bowl. Take the fried onion rings and roughly chop – you want some almost powdered bits and some larger, crispy pieces. Mix these into the rest of the ingredients and store in an airtight jar for up to 2 weeks.
